    As you would’ve guessed, this keto cauliflower pizza’s main ingredient is cauliflower. Loaded with nutrition and naturally high in B vitamins, antioxidants and fibre, it’s normal to think that something so healthy would be bland. But, that’s where you’re wrong. Though rich in nutritional value, this low-carb, gluten free recipe still packs a delicious flavour punch.

    Ingredients

    Serves: 4
    Preparation time: 45 minutes
    Cooking time: 10 minutes
    Ingredients
    680g Cauliflower Florets
    ½ cup Mozzarella Cheese, shredded
    cup Goat Cheese
    1 egg, beaten
    1 tspn salt
    1 tsp pepper
    1 tsp Italian seasoning

    Cooking method

    Preheat oven to 205°C.
    Grate cauliflower florets to make cauliflower rice. You may use a food processor or box grater to do so.
    Microwave cauliflower for 5 minutes or saute for 10 minutes under medium heat.
    Wait for cauliflower to cool down.
    Drain cauliflower and transfer into nut milk bag or dish towel. Proceed to squeeze cauliflower till there is no moisture.
    Using hands, mix cauliflower rice with cheese, egg and seasoning in a large bowl into everything is combined. This will be your pizza dough.
    Shape pizza base. Press down dough onto baking sheet to make an even circle. Diameter of pizza should be roughly 9 inches.
    Leave to bake for 25 minutes. If you used frozen cauliflower, you may want to cook for a few minutes longer.
    – Remove from pan.
    – Add toppings of your choice. Generously drizzle Naturel Extra Virgin Olive Oil.
    – Bake for another 10 minutes.
