Chicken, Pumpkin & Mushroom Brown & Red Rice

Make your CNY feast a fuss-free and delightful one with this one pot wonder! Earthy flavours of the Brown & Red Mixed Rice layered with savoury mushrooms, tender pumpkins, and succulent chicken – it’s definitely what this auspicious season calls for.

2 boneless chicken legs, cubed
1/2 small pumpkin, cubed
2 cups fresh shiitake mushrooms, sliced
2 cups (480ml) Naturel Organic Mixed Rice
5 cm piece of ginger, peeled
5 tablespoons oyster sauce
4 tablespoons light soy sauce
Generous pinch of salt
Spring onions, to garnish


- Soak the Naturel Organic Mixed Rice in water for 10-15 minutes while you prep the other ingredients.
- Mix the oyster sauce, light soy sauce and salt together in a bowl, and grate the ginger in.
- Mix half of this sauce in with the cubed chicken, and leave to marinate in the fridge until the rice is cooked.
- Mix water in with the remaining sauce to make up 650ml total.
- Drain the rice and place in a heatproof dish or bowl. Pour the sauce-water mix in, then place the sliced shiitake mushrooms on top.
- Steam on a high heat for 50 minutes. The rice should have absorbed most of the liquid and be very close to cooked.
- Layer the pumpkin and marinated chicken on top and steam again for 15 minutes, until everything is cooked through.
- Garnish with chopped spring onions, and serve!
