Ingredients:

Adjust Servings
2 cups Naturel Organic Mixed Brown and Red Rice
4 cups water
6 large prawns, remove shells and devein
180g fresh pineapple, cut into bite size cubes
20g diced carrot
20g edamame
20g sweet corn
30g roasted cashew
2 eggs
3 spring onion, for garnish
Seasoning:
1tbsp curry powder
1/2 tbsp white pepper
1 tbsp sugar
1 tsp salt
2 tsp soy sauce
2 tsp fish sauce
2 tbsp pineapple juice

Directions

Step 1: Prepare Rice
- In the rice cooker, add in 2 cups of Naturel Organic Mixed Brown and Red Rice with 4 cups of water. Cook as per usual.
- Once it is cooked, set aside at room temperature to cool down. (Alternatively, cook rice the day before)

Step 2: Prepare Seasoning
- Combine the seasoning ingredients together and set aside

Step 3: Fried Rice
- Heat up the frying pan on medium high heat, add in ½ tbsp oil.
- Add in edamame, carrot, sweet corn and ½ tsp salt. Fry until the carrot has softened. Remove from the pan.
- Add in prawn, pan seared on 1 side until it is half cooked. Flip and cook the other side until it is fully cooked. Remove from the pan and set aside.
- Pour eggs into the hot wok, scramble and cook evenly.
- Add in cooked rice, seasoning, pineapple, carrot, edamame and corn. Stir fry for at least 3 mins until it’s fully combined.
- Off the heat, add in cashew nuts and spring onion. Serve immediately.
