2 cups Naturel Organic Brown GABA and Riceberry Rice
2 dried lotus leaves
1 tbsp chicken powder
1 tbsp salt
6 dried shiitake mushrooms, soak in hot water for 30 mins. Remove the stem and cut into slices.
15g dried shrimp, rinse and soak in water for 30 mins to hydrate, chopped.
3 cloves garlic, minced
3 shallots, minced
250g chicken thigh meat, remove skin and cut into bite size cubes
3 spring onion, cut into small pieces for garnishing
10g peanuts, for garnishing
1 large red chilli, for garnishing
10 pcs braised baby abalones
Seasoning for chicken thigh: 1/2 tbsp oyster sauce, 1/2 tbsp light soy sauce, 1 tbsp chinese cooking wine, 1 tbsp dark soy sauce, 1 tbsp sesame oil, 1 tbsp corn flour, 1 tbsp grated ginger
Seasoning: 2 tbsp Naturel Sunflower Oil, 1/2 tbsp soy sauce, 1 tbsp scallop XO sauce, 1/2 tsp salt, 1/2 tsp sugar


Step 1: Prepare the Rice and the ingredients.
- In a rice cooker, add in 2 cups of rice and 4 cups of water, mixed with chicken powder and salt as specified above. Cook as per normal.
- In a bowl, add in chicken, shiitake mushroom slices and all the marinate. Give it a good mix, cling wrap and let it marinate in the chiller until the rice is ready.
- Once the rice is ready, open the lid and let it cool down for 15 mins at room temperature.
- In a frying pan with 2l of hot water, add in lotus leaves and poach it for 5 minutes. Remove from the pan, put it aside and use a clean cloth to dry it. Lay it on a bowl and set aside.
Step 2: Stir-fry
- Heat up a frying pan, add in 2 tbsp oil.
- Add in marinated chicken and fry until the chicken is fully cooked. Remove from the pan.
- Add dried shrimp, shallot and garlic. Fry until fragrant.
- Add in cooked rice, and the rest of the seasoning. Fry evenly.
- Add in the cooked chicken and fry evenly.
- Fry until the ingredients are fully combined. Do a taste test.
Step 3: Steam
- Place the baby abalone on the leaves.
- Spread the rice and wrap it.
- Steam it for 15 mins.
- Remove from the steamer, open the leaf.
- Garnish with spring onion and pine nuts.
