Ingredients:

3tbsp Naturel Organic Virgin Olive Oil
1/4 cup + 2 tbsp Naturel Organic Balsamic Vinegar
1pc Zucchini, diced
1pc Red bell pepper, diced
1pc Yellow pepper, diced
5 Garlic cloves, smashed to a paste
1/2tbsp Red pepper flakes
2 Eggs
1tbsp Fresh thyme leaves, freshly chopped
1/4cup Fresh parsley leaves, chopped
2pound Ground beef chuck
1cup Bread crumbs
1cup Ketchup
1/2cup Freshly grated Parmesan
1 pinch salt and pepper, to taste
Glazing sauce & serving sauce
100ml Naturel Organic Tomato with Mushroom Pasta Sauce
30g Shallots, chopped
50g Button mushrooms, chopped
1 pinch salt and peper, to taste

Directions

Pre-heat the oven to 220 degree Celcius.

Stir-fry the vegetables
- Add the Naturel Organic Extra Virgin Olive Oil to a pan
- Stir fry the Zucchini, Red bell pepper and Yellow pepper with the Red pepper flakes and the smashed garlic cloves
- Add salt and pepper to taste
- Cook for 5 minutes then set aside to cool

Mix the meatloaf
- In a bowl, whisk together the eggs, parsley and thyme.
- Add the mixture with the ground beef chuck, bread crumbs, ketchup, parmesan cheese and the cooled vegetables.
- Add in the Naturel Organic Balsamic Vinegar and mix everything evenly
- Mould the meatloaf into a baking tin and flip it onto a baking tray

Prepare the sauce
- In a frying pan, heat up the Naturel Organic Extra Virgin Olive Oil.
- Fry the shallots with the button mushrooms.
- Add in the Naturel Organic Balsamic Vinegar and Naturel Organic Tomato with Mushroom Pasta Sauce.
- Add red pepper flakes, salt and pepper to taste.

Bake the meatloaf
- Brush the sauce over the meat loaf.
- Bake for 1 hour and 15 minutes.
